1 sour green mango
1 Hoa Nam brand Vietnamese meatloaf of your choice
Handful of crushed, roasted peanuts
2 small chilis
1 clove of garlic
1 tablespoon of fish sauce
1 tablespoon of lime juice
1 tablespoon of brown sugar
Finely chopped cilantro
Dry roast peanuts for about 10 minutes at 180 °C in the oven, then roughly chop.
Rince chilis and finely chop. Add finely minced garlic or use a garlic press. Add sugar, fish sauce and lime juice. Mix until the sugar dissolves. Add chopped chilis, half of the peanuts and finely chopped cilantro.
Peel and shred the mango. Add the sauce and mix. Let marinate in the refrigerator for 1 hour.
Cut the Vietnamese meatloaf (Gio) into cubes, add to salad, top with the rest of the peanuts, and enjoy!
