400g of lean beef
1 Hoa Nam brand fresh Vietnamese meatballs (Gio Song), or beef balls, beef balls with nerves or pork balls
1 lime
1 piece of peeled and minced ginger
1 small red chili
1 small bundle of cilantro
1 small bundle of Thai chives
400g of fresh rice noodles
150cL of beef stock, or stock made with 2 cubes Maggi cubes, or any other stock
1 star anise
Hoa Nam brand fish sauce
Bring beef stock to a boil, add the star anise, ginger, and meatballs of your choice. If you are using the Gio Song, form the meatballs by hand and add. Cover and let cook for 12 minutes.
During this time, wash, dry, and finely chop the chives and cilantro. Chop the red chili, cut the lime into 4 wedges. Put aside.
Slice the beef into thin strips. Boil the rice noodles in salted water following the instructions on the packet.
In 4 large bowls, spoon 1 tablespoon of fish sauce in each bowl. Strain the rice noodles and portion them out into the bowls. Add the sliced beef and the meatballs, then cover with the hot stock. Sprinkle the chives and cilantro over top.
Serve immediately and enjoy!
